This part 1 of a very complete tutorial for running your own Postfix + Dovecot email server, with instructions for SPF, DKIM, DMARC, SpamAssassin, etc.
I've succesfully used this more than once, and apart from the general dismay of email being controlled by the few big players, everything works.
I've had good luck with IP reputation on Hetzner VPSs.
